The Hormone Kitchen: Summer Lemony Kale & Cabbage Slaw Salad

Lemony Kale & Cabbage Slaw Salad

Ingredients
1 bunch kale, shredded (recommended: Lacinato/Tuscan kale)
4 cups shredded purple cabbage (about ½ head)
2 large carrots, shredded
3 tbsp extra-virgin olive oil
1 ½–2 tbsp fresh lemon juice (about ½ lemon)
1 tsp lemon zest (optional, for extra brightness)
3 tbsp white balsamic vinegar (or substitute apple cider vinegar + ½ tsp honey)
½ tsp dried thyme
½ tsp dried parsley (or 1 tbsp fresh, chopped)
Himalayan crystal salt, to taste
Instructions
Place shredded kale, cabbage, and carrots in a large bowl.
In a small bowl, whisk together olive oil, lemon juice, zest (if using), vinegar, thyme, parsley, and salt.
Pour dressing over vegetables and toss well to coat.
Refrigerate for at least 20 minutes or up to 8 hours to let flavors meld. Serve chilled.
